As promised on October 1, here is the recipe for Easy Fantasy Fudge, as made for years in my mother-in-law Lois Carriker’s kitchen and later adapted for microwave cooking. Although I have the recipe written down in my “My Favorite Recipes” cookbook, I also still have the jar with the recipe on the label (there is no date on it, but I have been using this particular empty jar for at least 10 years).
Prep time: 10 minutes plus cooling. Microwave cooking time 11-1/2 minutes, or Stovetop cooking time 15 minutes.
3/4 C. (1-1/2 stick) margarine or butter, 2/3 C evaporated milk, 1 pkg (12 oz.) semi-sweet chocolate chips, 1 7oz. jar Jet Puffed Marshmallow Cream, 1 C. chopped nuts (optional, I leave them out), 1 tsp. vanilla
Microwave – Lightly grease 13X9″ or 9″ square pan. Microwave margarine in 4-qt. bowl on HIGH one minute, or until melted. Add sugar and milk, mix well. Microwave on HIGH 5 minutes, or until miture begins to boil, stirring after 3 minutes. Mix well; scrape bowl. Microwave on HIGH 5-1/2 minutes, stirring after 3 minutes. Gradually stir in chips til melted. Add remaining ingredients, mix well. Pour into prepared pan. Cool, cut into squares. Makes 3 pounds.
Stovetop – Prepare pan. Mix margarine, sugar and milk in heavy 2-1/2 – 3 quart saucepan; bring to full rolling boil on medium heat, stirring constantly. Continue boiling 5 minutes until candy thermometer reaches 234 degrees, stirring constantly. Remove from heat, gradually stir in chips til melted. Add remaining ingredients, mix well. Pour into prepared pan. Cool, cut into squares. Makes 3 pounds.
